In addition to cakes and other confections, you’ll find a variety of ensaymada—Philippine bread—topped with butter, sugar and cheese, or filled with purple yam, coconut, cream cheese or mongo beans. You’ll also find meals made with tropical fruits and vegetables, meats and fish seasoned with traditional herbs and spices, all influenced by the culinary traditions of neighbors like China and Spanish colonists.
