He’s helped guide Back Porch from a humble health-food stand into a Mecca of fine dining. A self-confessed Francophile, Medisch’s extensive travels (to Paris, as well as Thailand, Cambodia, Vietnam and more) influence his menu. He loves fresh seafood, as well as slow-braised dishes such as lamb shanks and rich veal cheeks. The key to staying on top of his game, he says, is applying classic techniques in a new way while keeping an eye out for new experiences.
