It’s a sight to behold: Just a floor above the chaotic candor of several Trolley Square hotspots is Catherine Rooney’s Hummingbird to Mars, a posh, speakeasy-style bar where well-dressed, well-behaved young professionals listen to jazz and sip cocktails named after Clark Gable and Jean Harlow. Whoa. There’s Victorian furniture and an antique bathtub filled with champagne bottles. There are signature, house-infused cocktails made with things like elderflower liqueur, lemon-vanilla foam, absinthe and mango puree, courtesy of mixologists Lo Skarda and Chris Resler. This secret spot might not be so secret anymore, but it’s definitely something different. If the antique lantern outside the door is lit, they’re open.
