Carl Georigi’s cozy-chic Eclipse is a bistro in the Parisian sense of the word. The cuisine is often simple, with hearty dishes such its famous braised short ribs with maple demiglace and andouille-spiked seafood stew with shrimp fumet. Service is exceptional, and the fun atmosphere has created an army of regulars who have been known to dine at Eclipse, well, on a regular basis.
There’s nothing more comforting on a bone-chilling day than Eclipse Bistro’s seafood stew. The bread pudding that accompanies the blend of clams, shrimp, crabs and spicy tomato broth is a nice touch, but the stew is the hungry man’s best defense against winter.
