Customers become chefs when they order one of the Stonegrill dishes at Dos Locos Fajita & Stonegrill. That’s because a 450-degree Australian lava rock (700 degrees when it leaves a special oven) is delivered to your table, along with your choice of meat and two side dishes. The raw meat—steak, lamb, pork, veal or seafood—is then sliced and cooked on the rock to your preference. Rubs and sauces can be added to your liking. Dos Locos, which owns the rights to use the Stonegrill system in these parts, touts the method as healthy because fat is trimmed from the meat, no oils are used, and the rock’s heat sears in natural juices and nutrients.
