Every morning at 6:30 a.m., Michelle LaFond and Catalina Ruiz arrive at The Bean Bag Café to make brownies, muffins and cookies. While the goods bake, the staffers prepare turkey chili, chicken salad, egg salad, tuna salad, spicy turkey salad, pasta salad and cole slaw. Bean Bag owner Holly Jankiewicz, who took over the business in 2003, calls her employees “fast women” because they work tirelessly to accommodate downtown patrons on their lunch hours.
