The Essentials

In the pantheon of desserts, there exists a small number of unavoidable, omnipresent dishes. They are the tried-and-true confections that dig their way onto dessert menus everywhere and never let go.

But they persist because we love them, because they’re so soothing and comforting, and because these stone-cold classics are so thoroughly ingrained in restaurant lore that removing one could cause Earth to fly off its axis. OK, a bit of an exaggeration, but you get the point. We love confection.

“We try a lot of different things here,” says Tina LaFashia, pastry chef at Harry’s Seafood Grill. “But people like traditional things. They like crème brûlée and apple crisp. Working at Harry’s taught me to be more adventurous, but some people just want that chocolate brownie or cheesecake.”
