By now, some restaurants’ signature foods are so well known, they’re almost defined by them—pumpkin-mushroom soup at The Back Burner in Hockessin, coconut macaroons at The Green Room of the Hotel du Pont, Seafood a la Nage at Nage in Rehoboth Beach.
