Best of Delaware Recipes: Chocolate Cupcakes from Sweet Somethings Dessert Shoppe
It’s all about the ganache.
So you tasted those delicious chocolate cupcakes from Sweet Somethings Dessert Shoppe in Wilmington at the Best of Delaware Party, and you simply must try to make them. Or, worse, you missed the party and missed the cupcakes. Never fear. Owner Lee Slaninko has supplied the recipe.
- Prepare your favorite chocolate cake recipe. (Box mix works great)
- Fill cupcake molds as you normally would.
- Bake and set aside to cool.
- 8 oz semi sweet choc chips
- 1/2 cup Heavy Cream
- 1/4 cup Milk
- Bring cream and milk to a boil.
Take off heat and add chocolate chips. Stir until completely smooth and set to cool.
When cupcakes are cool, use a long skinny knife or hollow dowel to core out the center of the cupcakes.
When the ganache is cool and the consistency of soft butter, add an equal amount of your favorite cream cheese frosting and stir gently, making sure you do not over mix, you want there to be a marbled look.
Place the ganache/ cream cheese mix in a piping bag with your favorite tip.
Fill the cupcake then top it with remaining mix. Cupcake are much better served at room temperature. However if you are not eating them that day, they must be refrigerated.
